Makes a good side, but very nice as a main with fresh bread and butter.
Ingredients
- 100 g butter
- 500 g onion sliced
- 500 g tomato diced fresh
- 500 g bacon rashers rindless roughly chopped
Method

Step 1Melt butter in pan. Fry onions until golden.

Step 2Add tomatoes.

Step 3Place bacon on paper towel on a microwave-safe plate. Cover with paper towel.

Step 4Microwave on high for 3-4 minutes until bacon starts to brown.

Step 5Add bacon to pan and cook until tomatoes are softened.

Recipe Notes
A combination of fresh and canned tomatoes may be used. Cooking the bacon this way brings out the flavour.
