French onion zucchini slice with bacon

Two favourites combine here to create a flavour-packed slice that can be enjoyed any time of the day. There’s no need to season the slice with salt as the French onion soup mix, cheese and bacon do that for you.

Ingredients

  • 400g zucchini, coarsely grated
  • 5 eggs
  • 150g (1 cup) Woolworths Essentials Self-Raising Flour
  • 40g sachet French onion soup mix
  • 2 green shallots, thinly sliced
  • 175g shortcut bacon, chopped
  • 60g butter, melted
  • 100g (1 cup) grated cheddar cheese

Method

  • Step 1
    Preheat oven to 180C/160C fan forced. Grease and line a 20cm x 30cm lamington pan baking paper, extending paper over the two long sides.
  • Step 2
    Using your hands, squeeze excess liquid from zucchini.
  • Step 3
    Whisk eggs in a large bowl until combined. Add flour and soup mix, and whisk until combined. Add zucchini, shallots, bacon, butter and cheese, then stir to combine.
  • Step 4
    Spoon egg mixture into prepared pan and spread to level. Bake for 30 minutes or until cooked through.
  • Step 5
    Cool in pan for 10 minutes, then slice and serve warm or at room temperature.
