French onion scalloped potatoes

These French onion scalloped potatoes are a variation on a regular potato bake and will be loved by everyone as either a side dish or the main event - the ultimate comfort food. - Greer Worsley

Ingredients

  • 1.5kg washed potatoes
  • 1 cup cream
  • 1 cup milk
  • 40g sachet French onion soup mix
  • 2 tsp olive oil
  • 1 brown onion, diced
  • 150g diced bacon
  • 1 cup grated tasty cheese

Method

  • Step 1
    Preheat oven to 180C. Grease a large oven-proof dish.
  • Step 2
    Peel potatoes and slice very thinly. In a large bowl, whisk together cream, milk and soup mix. Add potatoes and stir to coat.
  • Step 3
    Heat oil in a medium frypan and cook onions and bacon for 4 minutes until onion is soft. Add to bowl with potatoes. Add cheese. Stir well to combine.
  • Step 4
    Layer potatoes in prepared dish, ensuring plenty of onion, bacon and cheese are layered throughout. Finish with a neat overlapped layer of potatoes. Pour over any leftover cream mixture. Cover with foil and bake for 30 minutes. Remove foil and continue cooking for a further 15 minutes until golden and potato is cooked through.
Recipe Notes

Cooking time will vary depending on how thin your potato slices are. You can use a mandolin if you have one.

Omit the bacon for a vegetarian version.
