Ingredients

  • 500g spiral pasta
  • 1tbsp olive oil
  • 1 brown onion, diced
  • 1 clove garlic, crushed
  • 80g butter
  • 400g mushrooms, sliced
  • 2 tbsp plain flour
  • 40g sachet French onion soup mix
  • 3 cups milk
  • 200ml cream
  • 1/4 cup grated parmesan cheese

Method

  • Step 1
Preheat oven to 180C. Grease a large ovenproof dish. Cook pasta in boiling water for 8 minutes until slightly undercooked. Drain and set aside.
  • Step 2
Heat oil in a large frypan over medium heat and cook onion and garlic for 4 minutes until just starting to soften. Add butter and mushrooms and cook for a further 4 minutes. Stir through flour and soup mix and cook for 1 minute. Add half a cup of milk and stir well, then continue adding milk gradually until mixture thickens. Stir through cream. Taste and add salt/pepper if required.
