You can never have enough pasta bakes in your repertoire for easy midweek meals. This one has a little shortcut with some French onion soup mix to add flavour.
Ingredients
- 500g spiral pasta
- 1tbsp olive oil
- 1 brown onion, diced
- 1 clove garlic, crushed
- 80g butter
- 400g mushrooms, sliced
- 2 tbsp plain flour
- 40g sachet French onion soup mix
- 3 cups milk
- 200ml cream
- 1/4 cup grated parmesan cheese

Step 1Preheat oven to 180C. Grease a large ovenproof dish. Cook pasta in boiling water for 8 minutes until slightly undercooked. Drain and set aside.

Step 2Heat oil in a large frypan over medium heat and cook onion and garlic for 4 minutes until just starting to soften. Add butter and mushrooms and cook for a further 4 minutes. Stir through flour and soup mix and cook for 1 minute. Add half a cup of milk and stir well, then continue adding milk gradually until mixture thickens. Stir through cream. Taste and add salt/pepper if required.

Step 3Combine pasta with creamy sauce and pour into prepared baking dish. Sprinkle over parmesan and bake for 25 minutes until golden and bubbly.
