French onion mac ‘n’ cheese

Take your regular macaroni and cheese and turn it into something special by adding French onion soup mix. This delicious pasta bake makes the perfect side to a roast beef or chicken main. - Amira Georgy

Ingredients

  • 500g macaroni
  • 300ml thickened cream
  • 375ml (1 1/2 cups) milk
  • 3 tsp Dijon mustard
  • 40g sachet French onion soup mix
  • 105g (1 1/4 cups) grated tasty cheese
  • 70g (½ cup) grated parmesan
  • 65g (3/4 cup) pizza cheese
  • 15g (¼ cup) panko breadcrumbs
  • 2 tbsp coarsely chopped continental parsley

Method

  • Step 1
    Preheat grill to medium-high. Grease a 2-litre baking dish.
  • Step 2
    Cook pasta in saucepan of salted, boiling water according to packet instructions until al dente. Drain.
  • Step 3
    Meanwhile, stir cream, milk, mustard and French onion soup mix in a medium saucepan over medium heat or until mixture comes to a simmer. Add cheddar cheese and parmesan and stir until smooth. Season with salt and pepper.
  • Step 4
    Return pasta to saucepan with cheese sauce and ¼ cup pizza cheese. Stir to combine. Transfer to prepared dish.
  • Step 5
    Combine breadcrumbs and remaining pizza cheese in a small bowl. Sprinkle breadcrumb mixture over pasta mixture. Grill for 1-2 minutes or until top is golden. Sprinkle with parsley and serve.
