French onion and cheese patties

Ingredients

  • 1kg potatoes, peeled
  • 2 tsp olive oil
  • 1 brown onion, finely diced
  • 40g sachet French onion soup mix
  • 1 carrot, grated
  • 1 zucchini, grated
  • 1 egg
  • 2 cups bread crumbs
  • Extra oil, for frying

Method

  • Step 1
    Cook potatoes until soft. Drain and set aside to cool slightly. Mash.
  • Step 2
    Heat oil in a small frypan and cook onion for 4-5 minutes until soft. Add to mashed potatoes. Add carrot, zucchini and egg, and plenty of cracked pepper. Mix well. Form into 18 tablespoon-size balls. Flatten slightly into patties. Coat in breadcrumbs.
  • Step 3
    Heat extra oil in a large non-stick frypan over medium heat. Cook patties for 2-3 minutes each side until golden. Drain on paper towel, and serve hot or at room temperature.
Recipe Notes

No need to add salt to the mixture - the soup mix is salty enough.

Serve with a side salad. They’re delicious with a fried egg on top too!
