Use a simple sachet of French onion soup mix to flavour these delicious vegetable and cheese patties - perfect for a quick lunch or dinner.
Ingredients
- 1kg potatoes, peeled
- 2 tsp olive oil
- 1 brown onion, finely diced
- 40g sachet French onion soup mix
- 1 carrot, grated
- 1 zucchini, grated
- 1 egg
- 2 cups bread crumbs
- Extra oil, for frying

Step 1Cook potatoes until soft. Drain and set aside to cool slightly. Mash.

Step 2Heat oil in a small frypan and cook onion for 4-5 minutes until soft. Add to mashed potatoes. Add carrot, zucchini and egg, and plenty of cracked pepper. Mix well. Form into 18 tablespoon-size balls. Flatten slightly into patties. Coat in breadcrumbs.

Step 3Heat extra oil in a large non-stick frypan over medium heat. Cook patties for 2-3 minutes each side until golden. Drain on paper towel, and serve hot or at room temperature.
Recipe Notes
No need to add salt to the mixture - the soup mix is salty enough.
Serve with a side salad. They’re delicious with a fried egg on top too!
