Ingredients

  • 6 frankfurts sliced
  • 8 98% fat-free rindless shortcut bacon rashers chopped
  • 1 brown onion halved large sliced
  • 1 green capsicum cut into strips
  • 4 x 425 g tomato sauce canned baked beans
  • 250 ml chilli sauce hot *to taste
  • 1 cup tasty cheese grated

Method

  • Step 1
    Cook onion and bacon in a little oil until the onion is just soft then remove from pan.
  • Step 2
    Add the sliced frankfurts to the pan and cook until lightly browned.
  • Step 3
    Turn off heat and add remaining ingredients to the pan and mix well.
  • Step 4
    Transfer to an oven proof, wide casserole dish and top with tasty cheese.
  • Step 5
    Bake uncovered at 180C for 45 minutes.

Recipe Notes
Knackwurst works well but you can use any tasty, smoked sausage. I sometimes substitute 2 of the knackwurst for Chorizo sausages. I use an all purpose pan when making this so it can be used on the stove and also the oven, making this a one pan dish. Corn kernels or diced zucchini can also be added. I prefer to use the SPC brand of baked beans. The Homebrand variety are much drier. Slice knackwurst frankfurts into ½ cm pieces.
