This is just my favourite salad, so filling, full of protein and goodness - no dressing needed! Easy to make with a salad maker, slicing the salad for you, add anything left in your crisper!
Ingredients
- 1 lettuce thinly sliced
- 1/2 continental cucumber cut lengthways thinly sliced
- 2 tomatoes sliced
- 1 red capsicum quartered thinly sliced
- 1 carrot grated thinly sliced
- 2 cups mushrooms thinly sliced
- 1/2 cup low-fat cheese grated *to taste
- 420 g canned four bean mix drained
- 125 g canned sweet corn drained
- 1 pinch salt and pepper *to taste
Method

Step 1Place fresh ingredients in a large bowl.

Step 2Add cheese, four bean mix and corn.

Step 3Add salt and pepper.

Step 4Refrigerate for 5 minutes before serving.
