This is a light and easy fruit cake.
Ingredients
- 1 cup coconut
- 1 cup self-raising flour
- 1 cup sugar
- 1 cup mixed dried fruit
- 1 cup milk
Method

Step 1Mix all ingredients together in a bowl.

Step 2Pour into a round cake tin.

Step 3Bake at 170C for approximately 1 hour.
Recipe Notes
I am not always keen on dried peel so I use sultanas and glace cherries.
