A fun meal with simple ingredients.
Ingredients
- 24 fish fingers
- 1 1/2 cups mashed potato cooked hot
- 1 egg yolk
- 2 tsp butter
- 2 spring onions chopped
- 130 g canned corn cob kernels drained
- 1/2 cup tasty cheese grated
Method

Step 1Place fish fingers on a lightly greased oven tray. Bake at 180C for approximately 15 minutes, or until heated through.

Step 2Boil potatoes and mash.

Step 3Combine cooked potato, egg yolk, butter, spring onion and corn in a bowl.

Step 4Place 6 fish fingers on a lightly greased oven tray, spread with one quarter of the potato mixture and top with another 6 fish fingers.

Step 5Repeat with remaining potato mixture and fish fingers, finishing with potato layer.

Step 6Sprinkle with cheese and bake at 180C for approximately 20 minutes or until heated through.
