Ingredients

  • 24 fish fingers
  • 1 1/2 cups mashed potato cooked hot
  • 1 egg yolk
  • 2 tsp butter
  • 2 spring onions chopped
  • 130 g canned corn cob kernels drained
  • 1/2 cup tasty cheese grated

Method

  • Step 1
    Place fish fingers on a lightly greased oven tray. Bake at 180C for approximately 15 minutes, or until heated through.
  • Step 2
    Boil potatoes and mash.
  • Step 3
    Combine cooked potato, egg yolk, butter, spring onion and corn in a bowl.

  • Step 4
    Place 6 fish fingers on a lightly greased oven tray, spread with one quarter of the potato mixture and top with another 6 fish fingers.
  • Step 5
    Repeat with remaining potato mixture and fish fingers, finishing with potato layer.
  • Step 6
    Sprinkle with cheese and bake at 180C for approximately 20 minutes or until heated through.
