Ingredients

  • 500 g dried figs
  • 1 1/2 cup water
  • 1/2 cup brandy
  • 1/4 cup brown sugar
  • 1 lemon

Method

  • Step 1
    Thinly slice peel and juice the lemon. Place the figs, water and brandy in a large saucepan.
  • Step 2
    Bring to the boil. Reduce heat.
  • Step 3
    Simmer for approximately 30 minutes or until the fruit is tender.
  • Step 4
    Blend in sugar and lemon peel.
  • Step 5
    Simmer for a further two or three minutes.
  • Step 6
    Blend in juice.
  • Step 7
    Spoon the figs and liquid into sterilised jars.
  • Step 8
    Seal and store in a cool place.
Recipe Notes
The figs will keep well for up to 12 months. Prunes can be used.
