Creamy, crunchy and delightful - this is a favourite in my family.
Ingredients
- 400 g spirals pasta shapes cooked cooled
- 200 g bacon rashers diced
- 1/2 onion diced
- 2 eggs hard-boiled mashed
- 1/2 cup corn kernels cooked
- 1/2 cup peas cooked
- 2 tbs parmesan cheese grated
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 pinch salt and pepper *to taste
Method

Step 1Fry onion until transparent, set aside.

Step 2Fry bacon until well done, drain on absorbent paper and refrigerate whilst preparing rest of dish.

Step 3In a large bowl, combine all ingredients and fold together.

Step 4Season with pepper, to taste.

Step 5Served cold.

Recipe Notes
Onion can remain uncooked if you prefer. Mayonnaise and sour cream quantities can vary according to personal taste.
