The kids will enjoy these delightful eggs which are cradled inside a slice of toast.
Ingredients
- 4 slices thick cut or toast sliced fresh white bread
- 40g salted butter
- 40ml vegetable oil
- 4 extra large eggs
- Sea salt and pepper, to taste
Method

Step 1Place bread slices on a chopping board and using a heart shaped cutter (or another shape you like) to cut out the centre out of each slice.

Step 2Heat a medium sized frying pan over a medium-high heat. Add ¼ of the butter and ¼ of the oil and when foaming, add a bread slice and its cut out. Cook for 1-2 minutes or until golden. Flip and crack an egg into the slice of bread. After 1 minute, remove the cut out from the pan and place on a plate. Reduce the heat to medium low and cook for 3-4 minutes (for a semi set/slightly runny egg) or until the egg is cooked to your liking.

Step 3Serve with a sprinkle of sea salt and pepper, as desired.
Recipe Notes
To speed up the cook time, you can cover the toast with a lid. Check it every minute or so to ensure it doesn’t get over cooked.
If you have a big pan and can fit more than one piece of toast at a time allow for 10g of butter and 10g of oil per slice.
