A very clever idea to get the kids to help out in the kitchen.
Ingredients
- 5 eggs boiled
- 100 g salami finely grated
- 2 tsp Dijon mustard *to taste
- 3 stalks long green shallots *to taste
- 1 piece sweet and sour gherkin finely grated
- 1 pinch salt *to taste
- 5 pieces tomato halved *to decorate
- 1 bunch parsley *to decorate
- 1 tbs butter *to decorate
- 1 tbs whole-egg mayonnaise *to decorate
- 1 kg potatoes *to serve
- 1 pinch black pepper *to taste
Method

Step 1Boil potatoes in salted water until soft.

Step 2Strain and make mashed potato your way. Leave to cool and set aside 200g.

Step 3In the meantime, remove the shells from boiled eggs under running cold water, drain and cut off bottom end to allow the eggs to sit on a plate. Slice top end off and remove egg yolk, keep in separate a bowl. Repeat with all eggs.

Step 4Stuff the mashed potato mixture into hollowed egg whites and place them neatly on a plate.

Step 5Mash the yolk with fork and add chopped white ends of eggs, gherkin, 200g mashed potatoes, mustard, salami, shallots, mayonnaise, salt, black pepper and mix all together. Taste and season accordingly.

Step 6Cut the tomatoes in half and top filled eggs to create mushrooms. Use a skewer to decorate tomato tops with butter to create spotted effect.

Step 7Fill up pipping bag with mixture and decorate around eggs mushrooms. Decorate with parsley.
