The flavours of coffee, marsala and mascarpone in this easy loaf cake are everything - tiramisu in a cake!
Ingredients
- 1 tbsp instant coffee
- 125g unsalted butter
- 1 1/3 cups brown sugar
- 2 eggs
- 1/4 cup vegetable oil
- 1/4 cup marsala (optional)
- 2 cups self-raising flour
- 1/2 tsp baking powder
Mascarpone icing
- 250g mascarpone
- 1/2 cup icing sugar, sifted
For sweet coffee syrup
- 1/3 cup sugar
- 2 tbsp water
- 1 tsp instant coffee
Method

Step 1Preheat oven to 180C. Grease and line a 14cm x 24cm loaf tin.

Step 2Dissolve coffee in 1/2 cup boiling water.

Step 3In the bowl of a stand mixer or using handheld beaters, cream butter and sugar until pale. Add eggs one at a time, beating well between each addition. Add oil and marsala (if using). Add flour, baking powder and coffee mixture and beat for 2 minutes until very smooth. Pour into prepared tin. Bake for 35-40 minutes until a skewer inserted into the centre comes out clean. Cool in tin, then remove to a rack.

Step 4For icing, whisk together ingredients until smooth. To make sweet coffee syrup, combine ingredients in a small saucepan over medium heat. Bring to the boil and allow to simmer for 2-3 minutes until thick and sticky.

Step 5Spread icing over cooled cake, then drizzle over coffee syrup.
Recipe Notes
Use a good quality instant espresso for maximum flavour.
You can omit the sweet coffee syrup drizzle and grate over dark chocolate instead.
