Creamy, gourmet pumpkin soup.

Ingredients

  • 1 onion finely chopped
  • 1 potato roughly chopped
  • 1 red capsicum
  • 700 g pumpkin cubed
  • 4 cup chicken stock (liquid)
  • 1/2 tbs sweet sherry
  • 250 g light cream cheese cubed room temperature

Method

  • Step 1
    Cook onion with a little butter in large saucepan until soft.

  • Step 2
    Add potato, capsicum, pumpkin and stock.
  • Step 3
    Cook 30-35 minutes on a simmer with lid off or until pumpkin is tender.
  • Step 4
    Puree soup while still hot in food processor.
  • Step 5
    Return to saucepan and add sherry and cheese.
  • Step 6
    Heat until hot over low heat. Do not boil.

Serve with crusty bread.
