Creamy, gourmet pumpkin soup.
Ingredients
- 1 onion finely chopped
- 1 potato roughly chopped
- 1 red capsicum
- 700 g pumpkin cubed
- 4 cup chicken stock (liquid)
- 1/2 tbs sweet sherry
- 250 g light cream cheese cubed room temperature
Method

Step 1Cook onion with a little butter in large saucepan until soft.

Step 2Add potato, capsicum, pumpkin and stock.

Step 3Cook 30-35 minutes on a simmer with lid off or until pumpkin is tender.

Step 4Puree soup while still hot in food processor.

Step 5Return to saucepan and add sherry and cheese.

Step 6Heat until hot over low heat. Do not boil.
