Ingredients

  • 4 chicken breast fillet
  • 1 brown onion thinly sliced
  • 300 ml pure cream
  • 1 lemon juiced
  • 2 tbs soy sauce
  • 1 red capsicum thinly sliced
  • 1 garlic clove crushed
  • 1 tbs chicken stock powder
  • 1 tbs butter

Method

  • Step 1
    Melt butter in a large frying pan.
  • Step 2
    Add the chicken breasts, onion slices and garlic.
  • Step 3
    Cook until golden brown, then add the soy sauce, chicken stock, lemon juice and zest.
  • Step 4
    Add the capsicums, pour cream over the top and stir through.
  • Step 5
    Cover and let cream thicken.
  • Step 6
    Serve chicken on a bed of mash or rice and spoon lemon cream and capsicums over the top.
Recipe Notes
Warms up well the next day as the lemon juices keeps the chicken tender. I use a potato peeler to get really nice ribbon thin slices of capsicum and a lemon zester to get long thin strips of lemon zest. You can also sprinkle a few chilli flakes over the top if you prefer a more intense dish.
