Lemon chicken in a fresh cream sauce.
Ingredients
- 4 chicken breast fillet
- 1 brown onion thinly sliced
- 300 ml pure cream
- 1 lemon juiced
- 2 tbs soy sauce
- 1 red capsicum thinly sliced
- 1 garlic clove crushed
- 1 tbs chicken stock powder
- 1 tbs butter
Method

Step 1Melt butter in a large frying pan.

Step 2Add the chicken breasts, onion slices and garlic.

Step 3Cook until golden brown, then add the soy sauce, chicken stock, lemon juice and zest.

Step 4Add the capsicums, pour cream over the top and stir through.

Step 5Cover and let cream thicken.

Step 6Serve chicken on a bed of mash or rice and spoon lemon cream and capsicums over the top.
Recipe Notes
Warms up well the next day as the lemon juices keeps the chicken tender. I use a potato peeler to get really nice ribbon thin slices of capsicum and a lemon zester to get long thin strips of lemon zest. You can also sprinkle a few chilli flakes over the top if you prefer a more intense dish.
