Use this mixture to make gingerbread biscuits or gingerbread men.
Ingredients
- 125 g butter
- 1/2 cup treacle
- 1/2 cup brown sugar
- 1 egg yolk
- 1 tbs ground ginger
- 2 tsp mixed spice
- 1 tsp bicarbonate of soda
- 2 1/2 cups self-raising flour
Method

Step 1Place butter, treacle and brown sugar in a small saucepan, and heat until melted.

Step 2Cool in saucepan for approximately ½ hour.

Step 3Add egg yolk and mix well.

Step 4Place ginger, mixed spice, bicarbonate of soda and flour in a mixing bowl and mix well.

Step 5Add butter mix and stir to combine.

Step 6Preheat oven to 180C-200C.

Step 7Roll mixture into walnut-sized balls and place on a baking tray lined with baking paper. Bake for 10-12 minutes.

Step 8To make gingerbread men, roll out mixture between sheets of baking paper, the mixture is thick and sticky, to ½ cm thick, and use a biscuit cutter to cut out gingerbread men or 3cm rounds.

Step 9Place on an oven tray lined with baking paper, leaving 3cm between each biscuit. Bake for 7-10 minutes.

Step 10Leave on tray for 5 minutes before removing. Cool on a cake rack.

Step 11Store biscuits in an airtight container.
Recipe Notes
Golden syrup can substitute treacle.
Self-raising flour can be substituted with 2.5 cups plain flour and 5 teaspoons baking powder.
Great with coffee.
This makes 48 biscuits or 10 gingerbread men.
These will keep for weeks or months.
