Ingredients

  • 2 x 72g packets chicken flavoured 2-minute noodles
  • 1 cob corn, kernels removed
  • 1 cup frozen peas
  • 1 cup cooked chicken, diced
  • 3 shallots, sliced
  • 2 eggs, lightly beaten
  • 1 tbs soy sauce
  • 1/2 tsp sesame oil
  • 1/4 cup self-raising flour
  • 2 tbs vegetable oil
  • Extra shallots, sliced, to garnish

Method

  • Step 1
    Cook noodles in boiling water for 2 minutes. Add corn and peas for the last 30 seconds, then drain and set aside to cool.

  • Step 2
    In a large bowl, combine noodles and vegetables with chicken, shallots, eggs, soy sauce, sesame oil, and one sachet of noodle seasoning. Add flour and stir to combine.
  • Step 3
    Heat oil in a large non-stick frypan over medium heat. Divide noodle mixture into 6 equal portions and cook for 2-3 minutes each side until golden and crispy. Serve garnished with extra sliced shallots.
Recipe Notes

This recipe makes 6 large fritters, but you can easily make several smaller ones. Try breaking up the noodles before cooking them to make it easier to form smaller fritters.

Use frozen or canned corn if you prefer.
