Ingredients

  • 4 chicken breast fillet
  • 4 tsp butter
  • 4 tsp garlic diced
  • 4 tsp parsley chopped
  • 1 pinch ground pepper grated
  • 1 cup cheese grated
  • 200 g bacon rashers diced uncooked
  • 2 tbs olive oil

Method

  • Step 1
    Butterfly chicken breast and rub with garlic, placing majority in the centre of the breast.
  • Step 2
    Add the butter into the centre of the breast. Adjust to taste.
  • Step 3
    Add the diced bacon onto the breast, sprinkle with cracked pepper.
  • Step 4
    Close breast using cooking string and add a generous amount of olive oil.
  • Step 5
    Bake at 180C for 25 minutes then add grated cheese and bake until cheese has browned.
Recipe Notes

For the butter, I use about a 1 cm thickness sliced from the block. I add more diced bacon when I add the cheese at the end and more cracked pepper. If you like spice swap the pepper for cayenne pepper.
