Pop it in, blend it up and bake, cakes don’t get much simpler than this. Perfect to pop in a lunchbox or to accompany a hot cuppa in the afternoon, you’ll love this cake so much you’ll have it on repeat.
Ingredients
- 60ml milk
- 2 eggs
- 175g butter, melted, warmed
- 270g caster sugar
- 1 large banana, chopped
- 2 tsp vanilla extract
- 225g self-raising flour
- 1 tsp baking powder
- Icing sugar, to dust
Method

Step 1Preheat oven to 180C/160C fan-forced. Grease and line a 20cm cake pan with baking paper.

Step 2Place all ingredients, except icing sugar, in a blender and blend until just smooth. Pour into prepared pan and bake for 45-50 minutes or until a skewer inserted into the centre comes out clean. Stand in pan for 10 minutes, then turn out onto a wire rack to cool completely.

Step 3Dust with icing sugar and serve.
