Ingredients

  • 2 cups self raising flour
  • 1/2 cup thickened cream
  • 1/2 cup lemonade
  • Strawberry jam, to serve
  • Whipped cream, to serve

Method

  • Step 1
    Place flour in a large bowl, pour in lemonade and cream. Using a flat bladed knife, in a cutting motion, stir until a sticky dough forms.
  • Step 2
    Turn dough onto a lightly floured surface and knead for 30 seconds or until just smooth. Press into a 3-4cm thick disc. Using a lightly floured 5cm round pastry cutter, cut out 12 rounds, re-rolling dough if necessary. Place the scones, just touching into the basket of an air fryer. Lightly brush with extra cream.
  • Step 3
    Air fry at 180C for 8 minutes or until scones are risen, golden and sound hollow when tapped on the top. Transfer to a wire rack to cool.
  • Step 4
    Serve scones warm or at room temperature with whipped cream and jam if desired.
