Ingredients

  • 800 g potato cut into wedges
  • 1/3 cup olive oil
  • 1/4 cup dijon mustard
  • 1 tbs dried oregano

Method

  • Step 1
    Place potatoes into a large baking dish or pan.
  • Step 2
    Bake at 220C for 30-40 minutes until golden brown.
  • Step 3
    Combine remaining ingredients, drizzle over potatoes and toss.
Recipe Notes
Use waxy potatoes. Halved small potatoes may be used. Use dried oregano, basil or rosemary leaves.
