Ingredients

  • 4 fresh lasagne sheets
  • 500 g cream cheese
  • 250 g dried apricots diced
  • 150 g dried cranberries
  • 1/4 cup honey
  • 1/3 cup Italian marsala wine
  • 1 tbs vanilla essence
  • 150 g Oreo biscuits crumbled
  • 1 L vanilla custard

Method

  • Step 1
    Soften cream cheese at room temperature.
  • Step 2
    Combine softened cream cheese with apricots, cranberries, honey and marsala wine.
  • Step 3
    Refrigerate for approximately 1 hour.
  • Step 4
    Using a 23cm x 16cm shallow baking dish, pour some of the custard into the bottom to cover the base, then layer the "lasagne" alternating between custard, crumbled cookies, cream cheese mixture and lasagne sheets.
  • Step 5
    Finish off with cream cheese mix and crumbled cookies on the top.
  • Step 6
    Bake in a preheated oven at 180C (160C fan-forced) for approximately 1/2 hour, or until cooked through and lasagne sheets are al dente.
  • Step 7
    Serve as desired.

Recipe Notes

I found it is even better if allowed to cool and refrigerated overnight before reheating. Lasagne sheets should be approximately 23cm x 16cm.
