It's a very moist slice and is always everyone's favourite. Great for morning tea or school lunch box for kids and adults.
Ingredients
- 185 g butter
- 1 cup caster sugar
- 1 cup plain flour
- 1 tsp bicarbonate of soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 tsp cinnamon sugar
- 1/2 tsp allspice
- 2 eggs beaten well
- 1/2 cup raisins chopped
- 3/4 cup pumpkin cooked mashed
- 1 cup apple cooked
- 1/2 tsp vanilla essence
- 1/2 cup pecans chopped
Icing
- 1 1/2 cups icing sugar sifted
- 1/2 tsp vanilla essence
- 250 g cream cheese
- 2 tsp lemon juice
Method

Step 1Beat butter and sugar until light and fluffy. Sift dry ingredients together.

Step 2Add to mixture alternating with the eggs.

Step 3Stir in remaining ingredients, mix well.

Step 4Pour into a 28 cm x 18 cm deep lamington tin. Bake at 180C for 1 hour or until cooked.

Step 5Icing: Beat all ingredients until light and fluffy. Spread over cooled cake and decorate with pecans.
Recipe Notes
Use butter or butter substitute.
You can freeze this slice.
