Ingredients

  • 185 g butter
  • 1 cup caster sugar
  • 1 cup plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon sugar
  • 1/2 tsp allspice
  • 2 eggs beaten well
  • 1/2 cup raisins chopped
  • 3/4 cup pumpkin cooked mashed
  • 1 cup apple cooked
  • 1/2 tsp vanilla essence
  • 1/2 cup pecans chopped

Icing

  • 1 1/2 cups icing sugar sifted
  • 1/2 tsp vanilla essence
  • 250 g cream cheese
  • 2 tsp lemon juice

Method

  • Step 1
    Beat butter and sugar until light and fluffy. Sift dry ingredients together.
  • Step 2
    Add to mixture alternating with the eggs.
  • Step 3
    Stir in remaining ingredients, mix well.
  • Step 4
    Pour into a 28 cm x 18 cm deep lamington tin. Bake at 180C for 1 hour or until cooked.
  • Step 5
    Icing: Beat all ingredients until light and fluffy. Spread over cooled cake and decorate with pecans.
Recipe Notes

Use butter or butter substitute.

You can freeze this slice.
