A buttery biscuit base topped with a creamy condensed milk centre and strawberry jelly then sliced into delicious handheld bars? Yes, please! ​​Easier than it looks to make, strawberries and cream have never tasted this delicious, and this slice is pretty as a picture, too.

How to make this jelly slice: key tips

Start by making sure your lamington pan is deep enough to fit the 3 slice layers.

Chilling the crumbed base in the fridge for a while sets the butter, firming it up and making it ready to support the creamy topping. You then want to make sure that the middle layer is set before topping with the jelly mixture. Each of these layers takes a little time to set, making this a great make-ahead slice. Don’t worry, your patience will definitely be rewarded!

Be certain to cool the jelly mixture to room temperature before pouring it into the lamington pan, otherwise it will melt the chilled cheesecake layer. The jelly layer will then take 1-2 hours to set in the fridge, before you are able to cut your slice into mouth-watering portions.

Key ingredients in this jelly slice recipe

This recipe uses Arnott's Marie biscuits for the base, but you could also use digestive biscuits or any other plain, sweet biscuit.

Sweetened condensed milk and cream cheese create the sweet creamy middle layer of this jelly slice, while the gelatine powder gives it structural integrity.

The strawberry jelly makes this slice a true strawberries and cream fave, but you could easily swap it for pineapple, mango or raspberry jelly, which are all a lovely pairing for the creamy filling.

Ingredients

  • 250g Arnott's Marie biscuits crushed
  • 170g butter melted
  • 3 tsp gelatine powder
  • 1/4 cup water
  • 250g cream cheese
  • 395g sweetened condensed milk
  • 1/3 cup lemon juice
  • 1/2 cup cream
  • 85g packet jelly crystals strawberry

Method

  • Step 1
    Blend or process biscuits until they resemble breadcrumbs. Pour in melted butter until combined and sticking together.
  • Step 2
    Press biscuit mixture evenly over the base of a 20cm x 30cm lamington pan. Refrigerate until required.
  • Step 3
    Sprinkle gelatine over the water, allow to stand for a few minutes then microwave for 30 seconds or until dissolved.
  • Step 4
    Beat cream cheese until smooth. Add condensed milk, lemon juice and cream. Continue to beat until smooth.

    Stir in gelatine mixture. Pour over the top of biscuit base. Refrigerate until set for at least 2-3 hours.
  • Step 6
    Make jelly according to packet directions. Cool to room temperature before pouring over cream cheese layer.
  • Step 7
    Refrigerate until slice is set completely.
  • Step 8
    Cut into squares to serve.

Recipe Notes

Can I add fruit to this jelly slice?

If you like, you can easily add fruit – such as chopped strawberries – to the jelly layer of the slice. Add the strawberry after pouring on the jelly and before it goes into the fridge, so that the fruit sets in the jelly.

Can I make the jelly slice ahead of time?

Yes, in fact you’ll need to factor in the chilling time needed for each layer of the slice. After the slice is made, you can store it in an airtight container in the fridge for up to 3 days.
