Ingredients

  • 1 cup dates
  • 1 cup raisins
  • 3/4 cup white sugar
  • 1 egg large
  • 1 cup plain flour
  • 1 tsp baking powder
  • 1 tsp butter melted
  • 1 tsp bicarbonate of soda
  • 1 cup boiling water
  • 1 tsp vanilla essence

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Line a large loaf tin with baking paper and grease well.
  • Step 3
    Use a large bowl and soak dates and raisins in boiling water with the baking soda.
  • Step 4
    Beat egg and sugar together with an electric beater.
  • Step 5
    Add butter and vanilla essence to the mixture.
  • Step 6
    Sift flour and baking powder and add to the mixture.
  • Step 7
    Add dates and raisins, including water, mix well with an electric mixer.
  • Step 8
    Spread into prepared loaf tin.
  • Step 9
    Bake at 180C for 45 minutes to 1 hour.

Recipe Notes

When making this loaf I make two at once and freeze one - it freezes well. An alternative is to replace the raisins with 1 cup chopped dried apricots. Goes down very well with our family.
