This recipe was given to me by my aunty over 40 years ago and it is a lovely, moist loaf.
Ingredients
- 1 cup dates
- 1 cup raisins
- 3/4 cup white sugar
- 1 egg large
- 1 cup plain flour
- 1 tsp baking powder
- 1 tsp butter melted
- 1 tsp bicarbonate of soda
- 1 cup boiling water
- 1 tsp vanilla essence
Method

Step 1Preheat oven to 180C.

Step 2Line a large loaf tin with baking paper and grease well.

Step 3Use a large bowl and soak dates and raisins in boiling water with the baking soda.

Step 4Beat egg and sugar together with an electric beater.

Step 5Add butter and vanilla essence to the mixture.

Step 6Sift flour and baking powder and add to the mixture.

Step 7Add dates and raisins, including water, mix well with an electric mixer.

Step 8Spread into prepared loaf tin.

Step 9Bake at 180C for 45 minutes to 1 hour.

Recipe Notes
When making this loaf I make two at once and freeze one - it freezes well. An alternative is to replace the raisins with 1 cup chopped dried apricots. Goes down very well with our family.
