Ingredients

  • 1 cup dates finely chopped
  • 1 cup milk cold
  • 90 g butter
  • 3/4 cup sugar
  • 1 egg beaten
  • 1 tsp bicarbonate of soda
  • 1 1/2 cup plain flour
  • 1 tsp vanilla essence *to taste

Method

  • Step 1
    Combine the dates in milk and allow to soak for at least 1 hour, or overnight.
  • Step 2
    Grease a loaf tin, dust with flour.
  • Step 3
    Preheat oven to 180C.
  • Step 4
    Combine dates and milk with bicarbonate of soda.
  • Step 5
    Beat butter and sugar together until creamy, add essence.
  • Step 6
    Stir in flour, dates and milk.
  • Step 7
    Spread into loaf tin and bake for approximately 30 minutes.

  • 1 loaf pan
