Ingredients

  • 250 g spiral pasta gluten-free pasta uncooked
  • 1 tbs oil
  • 500 g lean beef mince
  • 1 carrot grated medium
  • 1 onion diced medium
  • 1 baby capsicum diced
  • 2 tsp garlic clove minced
  • 2 x 410 g Indian-style canned chopped tomato
  • 430 g can condensed tomato soup
  • 3/4 cup tasty cheese grated

Method

  • Step 1
    In a large saucepan, cook pasta, then strain in colander.
  • Step 2
    In same pan, add oil, mince, carrot, onion, capsicum and garlic. Cook until mince has browned.
  • Step 3
    Add canned tomatoes and tomato soup then simmer for 10 minutes, stirring often.
  • Step 4
    Stir in pasta and cheese.

Equipment

  • 1 saucepan
Recipe Notes
This can be made in the one pot, or if you prefer, at step 4, pour into a casserole dish, then sprinkle cheese on top and bake in a pre-heated 180C oven for 15 minutes or until cheese has melted. The flavour in this recipe comes from the tinned Indian-style chopped tomatoes with curry spices.
