One pot wonder for those busy nights.
Ingredients
- 250 g spiral pasta gluten-free pasta uncooked
- 1 tbs oil
- 500 g lean beef mince
- 1 carrot grated medium
- 1 onion diced medium
- 1 baby capsicum diced
- 2 tsp garlic clove minced
- 2 x 410 g Indian-style canned chopped tomato
- 430 g can condensed tomato soup
- 3/4 cup tasty cheese grated
Method

Step 1In a large saucepan, cook pasta, then strain in colander.

Step 2In same pan, add oil, mince, carrot, onion, capsicum and garlic. Cook until mince has browned.

Step 3Add canned tomatoes and tomato soup then simmer for 10 minutes, stirring often.

Step 4Stir in pasta and cheese.

Recipe Notes
This can be made in the one pot, or if you prefer, at step 4, pour into a casserole dish, then sprinkle cheese on top and bake in a pre-heated 180C oven for 15 minutes or until cheese has melted. The flavour in this recipe comes from the tinned Indian-style chopped tomatoes with curry spices.
