Great served with steamed rice. Quick and easy to make - my husband loves it!
Ingredients
- 2 tbs oil
- 2 onion large
- 1 tbs curry powder
- 12 thick sausage
- 1/2 cup raisins
- 2 cups beef stock (liquid)
- 1 tbs water
- 1 tbs cornflour
- 1 cup peas
Method
-
Step 1Add sultanas to the 2 cups of beef stock. This allows them to swell with the beef flavour while you cook the sausages and make curry mixture.
-
Step 2Cook sausages as normal and slice, set aside.
-
Step 3Heat oil in a large heavy based pan, cook onions and curry powder for 2 - 3 minutes Add cooked sliced sausages and turn frequently for approximately 2 minutes.
-
Step 4Add sultanas and beef stock and simmer for 10 minutes. Thicken gravy with blended cornflour and water and add peas and simmer for a further 5 minutes.
Recipe Notes
Pork or chicken sausages are popular alternatives to beef.
