This cupcake recipe has been passed down in my family, and is a failproof cupcake recipe.
Ingredients
- 125g margarine
- 3/4 cup sugar
- 2 eggs
- 1 1/2 cup self raising flour
- 1/2 cup milk
- 1 tsp vanilla extract
- Optional- lemon rind, orange rind, coffee, cocoa
Icing
- 1 1/2 icing sugar sifted
- 25g butter, softened
- 1 tbsp milk
Method

Step 1Cream butter and sugar.

Step 2Add eggs and vanilla.

Step 3Sift 1/2 cup flour and add 1/4 cup milk (slowly mix) (repeat 2x).

Step 4Put the mixture in the cupcake holders, and bake for 20 minutes.

Step 5Combine all ingredients to make icing.

Step 6Once cupcakes are completely cool, ice them.
