Ingredients

  • 125g margarine
  • 3/4 cup sugar
  • 2 eggs
  • 1 1/2 cup self raising flour
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • Optional- lemon rind, orange rind, coffee, cocoa

Icing

  • 1 1/2 icing sugar sifted
  • 25g butter, softened
  • 1 tbsp milk

Method

  • Step 1
    Cream butter and sugar.
  • Step 2
    Add eggs and vanilla.
  • Step 3
    Sift 1/2 cup flour and add 1/4 cup milk (slowly mix) (repeat 2x).
  • Step 4
    Put the mixture in the cupcake holders, and bake for 20 minutes.
  • Step 5
    Combine all ingredients to make icing.
  • Step 6
    Once cupcakes are completely cool, ice them.
