Ingredients

  • 1 Chinese cabbage, finely chopped
  • 4 spring onions, chopped
  • 1/2 cup slivered almonds
  • 2 two minute noodle packets, cooked cooled
  • 1 packet original fried noodles
  • 1 handful bean sprouts

Dressing

  • 2 tbsp white vinegar
  • 2 tbsp caster sugar
  • 4 tsp soy sauce
  • 1 tsp sesame oil
  • 1/4 cup olive oil

Method

  • Step 1
    Cook noodles following packet instructions.
  • Step 2
    Combine all the dressing ingredients in a saucepan. Stir well over a low heat until sugar is dissolved. Allow to cool.
  • Step 3
    Toss the cabbage, chopped shallots, almonds, cooled noodles and beans sprouts in a salad bowl. Add the dressing and toss to combine.
  • Step 4
    Just before serving add fried noodles and mix thoroughly.
