I love making these deep-fried cornflake drumsticks up for the family. It's even nice to eat cold at a picnic.
Ingredients
- 12 chicken drumstick
- 1/4 cup cornflake crumbs crushed
- 1 1/4 cup plain flour sifted
- 1 tsp celery stick
- 1 tsp onion salt
- 2 tbs chicken stock powder
- 1/2 tsp garlic powder
- 1/2 tsp ground white pepper
- 1 cup oil
Method

Step 1Place drumsticks in a large pan of boiling water, reduce heat and simmer, uncovered, for 8 minutes, or until chicken is almost cooked through. Drain.

Step 2Combine corn flakes, flour, celery salt, onion salt, stock powder, garlic powder and pepper in a medium bowl.

Step 3Place chicken drumsticks in a large bowl, cover with cold water.

Step 4Dip wet drumsticks into the seasoned flour mixture one at a time, and shake off excess.

Step 5Heat oil in deep heavy-based pan.

Step 6Gently add drumsticks and cook a few at a time over medium heat. Cook for 8 minutes, or until chicken is golden and cooked through.

Step 7Drain on paper towel, keep warm.

Step 8Repeat with remaining pieces.

Step 9Serve hot or cold.
Recipe Notes
Casserole pieces may be used, 2kg is usually sufficient. For 'extra crunch' after coating chicken in flour, egg and crushed cornflakes, re-coat the pieces in the egg and crushed cornflakes.
