Deliciously crispy roasted baby potatoes.
Ingredients
- 1 kg chat potato peeled
- 2 tbs oil
- 2 tbs butter
Method

Step 1Par-boil whole potatoes and allow to cool in fridge for at least half an hour.

Step 2Use a fork to scratch into the outer layer of the potatoes.

Step 3Add oil to a roasting pan and place in a 180C oven for 5 minutes.

Step 4Cook potatoes for 10-15 minutes until crisp on the outside and fluffy in the middle.

Step 5In a fry pan melt butter until bubbling. Just before serving drop potatoes into the butter and coat.

Step 6Remove from fry pan and place on paper towel to absorb excess oil.

- 1 large roasting pan
- 1 frying pan
Recipe Notes
Alternatively add to roasting pan 10-15 minutes before roast meat is cooked. Use rice bran oil.

Tips to convert this recipe to cook in an air fryer
In step 3, toss in oil and salt to ensure really well coated and air fry until crisp and golden.
