Ingredients

  • 30 g butter
  • 1 onion diced
  • 1 cup Tandaco stuffing mix
  • 500 ml Koppaberg alcoholic apple cider
  • 1 cup dried apple chopped
  • 1/4 cup sultanas
  • 2 kg rolled pork loin
  • 1/4 cup olive oil to coat
  • 1 tbs salt

Method

  • Step 1
    Heat butter in a small frying pan over medium heat.
  • Step 2
    Add onion and cook for a few minutes until soft.
  • Step 3
    Place stuffing mix into a medium bowl, pour over ½ cup of cider, reserving remainder for gravy. Stir with a fork until combined.
  • Step 4
    Add onion, apple and sultanas.
  • Step 5
    Season with pepper and set aside.
  • Step 6
    Wipe pork dry with paper towel.
  • Step 7
    Untie or cut elastic and reserve.
  • Step 8
    Unroll pork and lay flat, meat side up.
  • Step 9
    Fill centre with stuffing mixture and re-roll firmly.
  • Step 10
    Re-tie with elastic and rub oil and salt over skin.
  • Step 11
    Place pork on a rack in a roasting pan and leave uncovered in the fridge overnight to dry out the skin.
  • Step 12
    Preheat oven to 240C.
  • Step 13
    Pour approximately 1 cm water into bottom of the pan.
  • Step 14
    Roast pork for 30 minutes.
  • Step 15
    Reduce heat to 180C and continue to bake for approximately 25 minutes per 500 g of meat, until skin is golden and crisp.
  • Step 16
    Transfer to a warm carving tray, cover loosely with foil and rest for 15 minutes before slicing.
  • Step 17
    Serve with gravy.
