Crispy roast pork and apple Stuffing, brought to you by Woolworths Christmas.
Ingredients
- 30 g butter
- 1 onion diced
- 1 cup Tandaco stuffing mix
- 500 ml Koppaberg alcoholic apple cider
- 1 cup dried apple chopped
- 1/4 cup sultanas
- 2 kg rolled pork loin
- 1/4 cup olive oil to coat
- 1 tbs salt
Method

Step 1Heat butter in a small frying pan over medium heat.

Step 2Add onion and cook for a few minutes until soft.

Step 3Place stuffing mix into a medium bowl, pour over ½ cup of cider, reserving remainder for gravy. Stir with a fork until combined.

Step 4Add onion, apple and sultanas.

Step 5Season with pepper and set aside.

Step 6Wipe pork dry with paper towel.

Step 7Untie or cut elastic and reserve.

Step 8Unroll pork and lay flat, meat side up.

Step 9Fill centre with stuffing mixture and re-roll firmly.

Step 10Re-tie with elastic and rub oil and salt over skin.

Step 11Place pork on a rack in a roasting pan and leave uncovered in the fridge overnight to dry out the skin.

Step 12Preheat oven to 240C.

Step 13Pour approximately 1 cm water into bottom of the pan.

Step 14Roast pork for 30 minutes.

Step 15Reduce heat to 180C and continue to bake for approximately 25 minutes per 500 g of meat, until skin is golden and crisp.

Step 16Transfer to a warm carving tray, cover loosely with foil and rest for 15 minutes before slicing.

Step 17Serve with gravy.
