Ingredients
- 2 x 250g packets frozen chopped spinach, thawed
- 100g butter, chopped
- 1 large brown onion, chopped
- 3 garlic cloves, finely chopped
- 1 cup thickened cream
- 1/4 tsp ground nutmeg
- 750g white potatoes, peeled, very thinly sliced

Step 1Preheat oven to 200°C/180°C fan-forced. Squeeze spinach to remove excess moisture.

Step 2Melt 25g butter in a large frying pan over medium-high heat. Add onion and garlic. Cook, stirring, for 3 to 4 minutes or until softened but not coloured. Remove from heat. Add spinach, cream and nutmeg. Season with salt and pepper. Stir to combine. Transfer to a 6cm-deep, 20cm x 32cm baking dish.

Step 3Place remaining butter in a large microwave-safe bowl. Microwave on HIGH (100%) for 1 minute or until melted. Season with salt and pepper. Add potato. Using hands, toss until each slice is coated in butter. Arrange slices to cover spinach. Cover with greased foil. Place on a baking tray.

Step 4Bake for 45 minutes. Uncover. Bake for a further 30 minutes or until golden. Stand for 10 minutes. Serve.
