A delicious dessert made with rice cooked in milk and served with raspberry jam.
Ingredients
- 1 L milk
- 4 tbs sugar
- 140 g arborio rice
- 700 ml cream fresh
- 1 tsp vanilla essence
- 140 g toasted almonds chopped
- 150 g raspberry jam
Method

Step 1Bring the milk and sugar to the boil in a large pot.

Step 2Add the rice, cover and simmer until the rice absorbs all the milk.

Step 3Process to a puree using a blender.

Step 4Set aside until it cools down.

Step 5Beat the fresh cream until it becomes thick, and add to the rice mixture.

Step 6Add the chopped almonds and mix well.

Step 7Pour the mixture into small serving bowls and spread some raspberry jam over the pudding.

Step 8Refrigerate before serving.
