Creamy linguine with bacon.
Ingredients
- 8 bacon rashers cut into strips
- 6 mushrooms thinly sliced
- 1/3 cup spinach
- 1 tsp crushed garlic
- 1/2 tsp butter
- 2 egg
- 2 egg yolks
- 1/4 cup parsley finely chopped
- 1/2 cup cream
- 1/2 cup parmesan grated
- 150 g linguine pasta
- 1 tsp olive oil
Method

Step 1Boil water until bubbling, add teaspoon of olive oil, add linguine and boil until just tender.

Step 2Whisk 2 eggs and 2 egg yolks, salt and pepper, Parmesan and cream.

Step 3Fry bacon, mushrooms, spinach and garlic in butter until bacon is slightly browned.

Step 4Meanwhile drain linguine and place back into hot saucepan. Add the egg and bacon mixture, mix and then add parsley.
