Ingredients

  • 800 g chicken breast fillet cubed
  • 1 broccoli cut into pieces
  • 1 onion diced
  • 1 carrot diced
  • 1/2 cup peas
  • 425 g canned cream of chicken soup
  • 1 tbs cream
  • 8 rice *to serve

Method

  • Step 1
    Fry chicken in a deep pan until white. Do not brown. Soak peas for 2 minutes in water.
  • Step 2
    Add onion, carrot, broccoli and peas to the chicken. Cook for 5 -7 minutes on a medium heat.
  • Step 3
    Lower the heat and add the soup and enough cream to give the mixture a creamy, sauce, like consistency.
  • Step 4
    Add salt and pepper to taste.
  • Step 5
    Leave simmering on a low heat for 10 - 15 minutes. Serve on boiled rice.
Recipe Notes
You could also add half a cup of chopped mushrooms. I find Cambells Cream of Chicken condensed soup (from the can) works great with this recipe, but any will work fine.
