Creamy Cauliflower Soup

An easy and really nice soup.

Ingredients

  • 50 g butter
  • 1 onion chopped medium
  • 1 cauliflower coarsely chopped medium
  • 2 tsp curry powder
  • 1L chicken stock (liquid)
  • 2 cup water
  • 1/2 cup cream
  • 3 tbs camembert
  • 1 tsp chives reserve liquid *optional
  • 4 tsp sour cream *optional

Method

  • Step 1
    Heat butter and cook onion and cauliflower until soft.
  • Step 2
    Add curry powder and cook for 30 seconds.
  • Step 3
    Add water and stock and simmer covered for 10 minutes or until cauliflower is soft.
  • Step 4
    Blend with a stick blender until smooth.
  • Step 5
    Stir in cream and Camembert cheese
  • Step 6
    Serve with chives on top, a dollop of sour cream and extra Camembert if desired.

Equipment

  • 1 stick blender
Recipe Notes

You can leave out the Camembert if you wish, but I find it adds a special touch.
