An easy and really nice soup.
Ingredients
- 50 g butter
- 1 onion chopped medium
- 1 cauliflower coarsely chopped medium
- 2 tsp curry powder
- 1L chicken stock (liquid)
- 2 cup water
- 1/2 cup cream
- 3 tbs camembert
- 1 tsp chives reserve liquid *optional
- 4 tsp sour cream *optional
Method

Step 1Heat butter and cook onion and cauliflower until soft.

Step 2Add curry powder and cook for 30 seconds.

Step 3Add water and stock and simmer covered for 10 minutes or until cauliflower is soft.

Step 4Blend with a stick blender until smooth.

Step 5Stir in cream and Camembert cheese

Step 6Serve with chives on top, a dollop of sour cream and extra Camembert if desired.
Equipment
- 1 stick blender
Recipe Notes
You can leave out the Camembert if you wish, but I find it adds a special touch.
