So easy
Ingredients
- 1/2 cauliflower broken into florets
- 1/2 broccoli broken into florets
- 5 cup chicken stock (liquid)
- 1 onion diced
- 3 garlic clove finely chopped
- 2 tbs olive oil
- 250 g camembert chopped
- 1/4 cup cream
Method

Step 1Heat oil and gently fry onion and garlic until softened.

Step 2Add chicken stock, broccoli and cauliflower and bring to the boil.

Step 3Simmer for approximately 1 hour.

Step 4Cool for 10 minutes.

Step 5Blend soup with stick blender until smooth.

Step 6Add cream and cheese, and reheat slightly to melt cheese through.

Step 7Add salt and pepper to taste.
