A salmon and rice dish.
Ingredients
- 2 x 200 g canned salmon
- 3 cup rice cooked
- 1 tbs plain flour
- 1 lemon rind grated
- 300 ml milk
- 1 onion diced
- 1 tbs parsley
- 2 tbs dried breadcrumbs
- 1 pinch salt and pepper
Method

Step 1Heat oil and cook onion until clear. Add flour and cook 1 minute.

Step 2Add salmon juice and milk, stirring until it boils and thickens.

Step 3Add pepper, salt, lemon rind, rice and parsley and mix well.

Step 4Add salmon and stir through.

Step 5Spoon into ramekins or casserole dish.

Step 6Spread breadcrumbs on top and a few dollops of butter.

Step 7Cook for half an hour at 180C.
Recipe Notes
If you don't want to use butter, you can carefully spray oil on top. Serve with vegetables of choice.
