Ingredients

  • 2 x 200 g canned salmon
  • 3 cup rice cooked
  • 1 tbs plain flour
  • 1 lemon rind grated
  • 300 ml milk
  • 1 onion diced
  • 1 tbs parsley
  • 2 tbs dried breadcrumbs
  • 1 pinch salt and pepper

Method

  • Step 1
    Heat oil and cook onion until clear. Add flour and cook 1 minute.
  • Step 2
    Add salmon juice and milk, stirring until it boils and thickens.
  • Step 3
    Add pepper, salt, lemon rind, rice and parsley and mix well.
  • Step 4
    Add salmon and stir through.
  • Step 5
    Spoon into ramekins or casserole dish.
  • Step 6
    Spread breadcrumbs on top and a few dollops of butter.
  • Step 7
    Cook for half an hour at 180C.
Recipe Notes
If you don't want to use butter, you can carefully spray oil on top. Serve with vegetables of choice.
