Ingredients
- 3 cups plain flour
- 3 tbs baking powder
- 2 tbs sugar
- 1/2 tsp salt
- 2 eggs
- 1 tbs vanilla essence
- 4 tbs butter melted
- 1 cup choc chip cookies chopped
- 1 chocolate sauce
- 2 tbs whipped cream *optional
- 2 choc chip cookies *to decorate
- 1 knob butter *extra for frying
- 2 1/2 cups milk
Method

Step 1Mix the flour, baking powder, sugar and salt together in a big bowl.

Step 2In a smaller bowl, mix together milk, eggs and vanilla

Step 3Add the wet ingredients to the dry and mix gently until just combined. Add chopped cookies to the batter.

Step 4Add the melted butter and mix until just incorporated.

Step 5Melt a couple of teaspoons of butter in a non-stick frying pan over medium-high heat.

Step 6Pour about a ¼ cup of pancake batter into the pan for each pancake.

Step 7Cook until you see little bubbles forming in the batter then flip them and cook for 3-4 minutes.

Step 8Serve with butter, more chunks of cookies and chocolate sauce or syrup and, if you’re feeling wild, whipped cream.
