Ingredients

  • 1 cup sultanas
  • 1/4 cup sherry
  • 1 1/4 packet Lattice biscuits
  • 250 g unsalted butter softened
  • 1/2 cup sugar
  • 250 g cream cheese softened
  • 2 tsp gelatine powder
  • 1/4 cup water

Method

  • Step 1
    Soak sultanas in sherry for 2 hours or overnight.
  • Step 2
    Line a lamington tin with foil. Place a layer of biscuits sticky side down into tin.
  • Step 3
    Cream butter and sugar until light and fluffy.
  • Step 4
    Add cream cheese and mix well.
  • Step 5
    Dissolve gelatine in 2 teaspoons of the water.
  • Step 6
    Heat remaining water and add to softened gelatine.
  • Step 7
    Stir in gelatine and undrained sultanas to mixture.
  • Step 8
    Spread mixture evenly over biscuits.
  • Step 9
    Top with another layer of biscuits, sticky side up
  • Step 10
    Refrigerate until firm (approximately 2 hours).
Recipe Notes

I used a sweet cream sherry but you could use any favourite flavoured alcohol. Next time I will cut the biscuits into halves or quarters before making and make sure the top and bottom match so as cutting is easier.

Arnott’s has now discontinued Lattice biscuits, but this recipe for homemade Lattice biscuits shows you how to turn their SAO crackers into them, just by glazing with a simple sugar syrup. If you prefer the thinner Salada biscuits, you can easily substitute SAOs for Saladas.
