A family favourite recipe without eggs. An Irish friend of mine once said, it was as good as their traditional Christmas cakes. Give it a try!
Ingredients
- 1125g mixed fruit
- 250g butter, chopped
- 1 tsp bicarbonate of soda
- 1 cup water
- 395g condensed milk
- 1 tbs white vinegar
- 2 tbs sherry
- 1 tsp vanilla essence
- 2 cups plain flour, sifted
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground cloves
- 1/4 cup glace cherries *to decorate
- 1/4 cup almonds *to decorate
Method

Step 1Put mixed fruit, butter, bicarb soda and water in a pan and bring to the boil. Allow to cool.

Step 2Add condensed milk, vinegar, sherry or brandy and vanilla essence.

Step 3Sift flour, baking powder, salt and ground cloves, and gradually add to fruit mixture.

Step 4Put into a greased, paper-lined tin and bake at 150C for 2 hours. Check with a skewer and adjust cooking time if necessary.

Step 5Put a cherry in each corner and place almonds to make a flower effect.

Step 6Brush with sherry or brandy to glaze.
Recipe Notes
You could replace some of the fruit with craisins or apricots and add some nuts.
You can replace sherry with brandy.
Mixture may be made into smaller cakes and covered with cellophane to make great little Christmas gifts.
