This is a quick and easy salad for lunch.
Ingredients
- 300 g salami coarsely grated
- 1 onion coarsely grated
- 100 g sweet and sour cucumber thinly sliced
- 4 egg brought to room temperature
- 100 g frozen peas
- 1 carrot
- 1 red capsicum cut into pieces
- 1 green capsicum cut into pieces
- 150 ml whole-egg mayonnaise
- 1 pinch salt and pepper
Method

Step 1Place the eggs in a saucepan and cover with cold water. Simmer eggs for 8 minutes, until they are hard boiled. Use a slotted spoon to remove the eggs. Allow to cool, then peel shells and coarsely grate eggs.

Step 2Microwave frozen peas for 3 minutes, or until cooked, then rinse under cold water to cool. Cook carrot in microwave for 1 minute. Allow to cool then coarsely grate.

Step 3Add all ingredients into a large bowl and gently mix all together. Taste, to see if any seasoning needs to be added.

Step 4Keep covered in fridge until serve. Serve cold on a plate with freshly crunchy toast.

Recipe Notes
You can grill french stick and serve with salad as well. I like to use polish salami that's grated on the biggest holes.
