Coffee Walnut Condensed Milk Fruit Cake

This dessert is a hit no matter which event I bring it to. Studded with walnuts, the rich coffee-flavoured condensed milk cake is like a cross between a fruit cake and a sticky date pudding. What’s not to love? - Greer Worsley

Ingredients

  • 500g pitted dates, chopped
  • 250g mixed dried fruit
  • 3 tbsp instant espresso powder
  • 395g tin condensed milk
  • 3 eggs
  • 1 1/2 cups self raising flour
  • 1 cup walnuts

Method

  • Step 1
    Preheat oven to 140C conventional. Grease a 20cm round springform cake tin and line the base and sides with two layers of baking paper.
  • Step 2
    Place dates and dried fruit in a saucepan with 2 1/2 cups water and espresso powder. Bring to the boil then reduce heat and simmer for 4 minutes. Transfer to a large mixing bowl and allow to cool slightly.
  • Step 3
    Stir condensed milk and eggs into the boiled fruit mixture. Fold through flour and walnuts. Pour into prepared cake tin and bake for 1 3/4 hours until a skewer inserted into the centre comes out clean. Cool in the tin.

Notes:

  • You can use 2-3 shots of real espresso instead of the powder.
  • This cake will keep for weeks well-wrapped in an airtight container.
  • Serve as is with a cup of tea, or warm with custard or cream.
