These coffee scones are the mouthwatering twist on an afternoon tea classic. They're delicious on their own or with a cuppa.
Ingredients
- 2 cups self raising flour
- 60g butter
- ¼ cup raw caster sugar
- 1/3 cup milk
- ¼ cup espresso
Glaze
- 1 cup icing sugar
- 2 tsp melted butter
- 1 tbls espresso coffee
Method

Step 1Preheat oven to 200C/180C fan forced.

Step 2Place flour into a bowl, rub in butter until mixture resembles breadcrumbs. Mix in sugar. Combine milk and ¼ cup espresso, add to the flour and with a knife, using a cutting motion, mix to form a dough.

Step 3Turn onto a lightly floured surface and knead to bring the dough together. Flatten to an inch thick and using a 5cm round cutter, cut out 15 scones.

Step 4Arrange on a baking tray dusted with flour with 2cm gap between each scone. Bake for 12-15 minutes and transfer to a wire rack.

Step 5Combine glaze ingredients in a bowl. Pour over hot scones and leave to cool. Serve with soft butter if desired.
