Ingredients

  • 2 cups self raising flour
  • 60g butter
  • ¼ cup raw caster sugar
  • 1/3 cup milk
  • ¼ cup espresso

Glaze

  • 1 cup icing sugar
  • 2 tsp melted butter
  • 1 tbls espresso coffee

Method

  • Step 1
    Preheat oven to 200C/180C fan forced.
  • Step 2
    Place flour into a bowl, rub in butter until mixture resembles breadcrumbs. Mix in sugar. Combine milk and ¼ cup espresso, add to the flour and with a knife, using a cutting motion, mix to form a dough.
  • Step 3
    Turn onto a lightly floured surface and knead to bring the dough together. Flatten to an inch thick and using a 5cm round cutter, cut out 15 scones.
  • Step 4
    Arrange on a baking tray dusted with flour with 2cm gap between each scone. Bake for 12-15 minutes and transfer to a wire rack.
  • Step 5
    Combine glaze ingredients in a bowl. Pour over hot scones and leave to cool. Serve with soft butter if desired.
