My kids and husband cannot get enough of this - it's your curried sausages with a twist.
Ingredients
- 6 beef sausages
- 6 potatoes chopped
- 2 celery stalks diced
- 2 carrots chopped
- 1 onion chopped
- 400 g Woolworths Diced Tomatoes
- 1 tbs crushed garlic
- 2 tbs curry powder
- 2 cups chicken stock (liquid)
- 375 ml Carnation coconut milk *see notes
- 2 cups rice *to taste *to serve
- 1 pinch salt and pepper *to taste
Method

Step 1Brown sausages in a pan, cutting in half in the pan, so they cook through.

Step 2When sausages are almost cooked, add onions and celery, and cook until just soft.

Step 3Add carrots, potatoes, garlic and salt and pepper.

Step 4Add curry powder and stir until fragrant.

Step 5Add stock and tomatoes and mix well. Allow to simmer.

Step 6Place mixture in an ovenproof dish and bake at 180C for approximately 10 minutes.

Step 7Add 1/2 the coconut milk and stir through. Cook for a further 5 minutes. Leave in a hot oven whilst making the rice.

Step 8Place rice in a pot with the remaining coconut milk, cover with water and cook until rice is soft.
Recipe Notes
Use 1/2 of the 375ml can of coconut milk for the sausages, and add the remaining half to the rice.
It's great the next day in lunch boxes.
